• 200g Belly Pork Per Person  (each portion cut into 3 or 4 slices)
  • 1-2L Cold Water
  • 250ml Chicken Stock
  • 2 Tablespoons Honey
  • 2 Cloves Garlic or A Pinch of Powdered Clove
  • 2 Bramley Apples (peeled, cored and chopped)
  • 250ml Dry Cider
  • Pinch of Powdered Ginger
  • Pinch of Ground Allspice
  • Pinch of Smoked Paprika
  • Pinch of Dark Brown Sugar
  • Salt and Pepper

In a deep pan cover pork with water and stock then add all dry ingredients except the apples
